With an opening caveat that most predictions of trends to come are wide of the mark, but ever keen to offer a viewpoint, here are the things that we believe will impact and need to be addressed by leisure businesses hoping to be successful in 2011.
General Tourism
- The staycation will continue, but predictions are it will suffer a modest decline as tourists seek a gentle return to more exotic climes.
- Also a modest decline in UK breaks.
- Visitors will be looking for cost-effective self-made entertainment, such as walking and cycling. (Hotels to structure and facilitate walking and cycling activities.)
- And an increase in home cooking and takeaway meals. So the message is that businesses will need to fight harder for the available £. (More gastro pubs to offer takeaways.)
- And no ash cloud to help us in 2011.
Food - Continued strength in the power of local provenance and more use of the ‘Freedom Food’ marque.
- A move towards authentic food and cooking. Growth in Mexican and Japanese is rumoured.
- And on the same theme - look out for the Korean barbecue!
- Boredom sets in with calories counting, and more of a focus to health food - low salt and sugar.
- A rise in the mini-multi dessert and growth of all things chocolate - including chilli-chocolate.
- And a great comfort to us all - pies of all kinds, sweet and savoury will grow in
popularity.

Marketing
- The continued march of social media and for restaurants sms and electronic booking.
- Farmers to become celebrities - stand up ‘Richard Haddock of Churston Farm Shop, in Devon!
Concepts
- The south west will see the introduction of pop-up restaurants. A great idea for our affluent out of the way communities.
